- 1 packet taco seasoning (1 oz, original or low-sodium)
- 1 tsp cumin (ground)
- 1/2 tsp chili powder (ground)
- 1/4 cup fresh cilantro (chopped, for garnish)

Instructions
- Gather your ingredients: boneless chicken breasts, black beans, corn, diced tomatoes, Rotel, chicken broth, spices, and fresh cilantro.
- Dice the onion and mince the garlic.
- Toss the onions and garlic into the slow cooker.
- Mix in the diced tomatoes, black beans, and corn.
- Add the chicken broth, ensuring all ingredients are submerged.
- Sprinkle in the taco seasoning, cumin, and chili powder.
- Place the chicken breasts into the mixture.
- Seal the slow cooker with its lid and set it to low for 6-8 hours or high for 4-6 hours.
- Remove the chicken and shred it using two forks.
- Add the shredded chicken back to the pot.
- Incorporate the fresh cilantro, adjusting seasoning if necessary.
- Ladle the soup into bowls and top with crispy tortilla strips.
Notes
- For added flavor, consider using smoked paprika in place of chili powder.
