Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 4 cups kale, stems removed and chopped
- 1 tablespoon olive oil

- Salt to taste
- Black pepper to taste

- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss sweet potatoes with olive oil, garlic powder, paprika, salt, and black pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 to 30 minutes until tender and lightly browned.
- Meanwhile, place kale in a large bowl and massage with lemon juice and a pinch of salt until slightly wilted.
- Add roasted sweet potatoes to the kale and gently toss to combine.
- Sprinkle grated Parmesan cheese over the top before serving warm.
