Description

A delightful recipe for raspberry filled donuts that are fluffy, sweet, and perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1/2 teaspoon salt
  • 3/4 cup warm milk (110°F/45°C)
  • 2 tablespoons unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raspberry jam
  • 1/2 cup confectioners’ sugar
  • 2 tablespoons raspberry juice (or milk)
  • Pink food coloring (optional)
  • Oil for frying (vegetable or canola)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine flour, sugar, yeast, and salt. Gradually add warm milk, butter, egg, and vanilla extract. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  2. Shape the Donuts: Roll out the dough to about 1/2 inch thickness on a floured surface. Cut into circles using a donut cutter or a round cutter and a smaller one for the center hole if desired. Place on a baking sheet, cover, and let rise for 30 minutes.
  3. Fry the Donuts: Heat oil in a large pot or deep fryer to 350°F (175°C). Fry each donut until golden brown, about 1 minute per side. Remove and drain on paper towels. Cool completely.
  4. Fill with Raspberry Jam: Use a piping bag with a long nozzle to fill each donut with raspberry jam.
  5. Prepare the Glaze: Mix confectioners’ sugar with raspberry juice or milk until smooth. Add pink food coloring, if desired, to enhance the color. Dip the top of each donut into the glaze and let it set.

Notes

  • Ensure the milk is warm but not hot to activate the yeast effectively.
  • For added flavor, try adding a little lemon zest to the dough.
  • If you don’t have a piping bag, a simple zip-lock bag with the corner cut off can work for filling the donuts.
  • Adjust the sweetness of the glaze by varying the amount of sugar and juice.
