Description

Delicious pumpkin cookies that are soft and chewy, perfect for fall!


Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup pumpkin purée
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Beat together softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add pumpkin purée, egg yolk, and vanilla extract and mix well.
  3. In a separate bowl, whisk flour, pumpkin pie spice, baking soda, and salt.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  5. Cover and refrigerate dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop tablespoon-sized dough onto the baking sheet.
  8. Bake for 10–12 minutes until edges are set and centers look slightly underdone.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For a sweeter cookie, add more granulated sugar.
  • Try adding chocolate chips for extra flavor!
