Delicious pumpkin cookies that are soft and chewy, perfect for fall!
Ingredients

- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/3 cup pumpkin purée
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Beat together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add pumpkin purée, egg yolk, and vanilla extract and mix well.
- In a separate bowl, whisk flour, pumpkin pie spice, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Cover and refrigerate dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop tablespoon-sized dough onto the baking sheet.
- Bake for 10–12 minutes until edges are set and centers look slightly underdone.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For a sweeter cookie, add more granulated sugar.
- Try adding chocolate chips for extra flavor!
