Description

Delicious Portobello mushroom fajitas with sautéed vegetables and a hint of lime.


Ingredients

Scale
  • 2 large Portobello mushrooms, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh lime juice
  • Tortillas
  • Optional toppings: sliced avocado, cilantro, salsa

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add the sliced onion and bell pepper to the pan. Sauté until softened, about 5 minutes.
  3. Add the sliced Portobello mushrooms and cook for another 5 minutes until tender.
  4. Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Cook for an additional 2 minutes.
  5. Squeeze fresh lime juice over the mixture and stir to combine.
  6. Fill warm tortillas with the veggie mixture and top with avocado, cilantro, or salsa if desired. Serve immediately.
