Description

This Cheesy Pepperoni Bake is a delicious and easy dish perfect for dinner. Layers of rich cottage cheese, marinara sauce, and vibrant veggies come together for a crowd-pleasing meal.

  • 2 cups cottage cheese
  • 2 large eggs
  • 1 cup marinara sauce, divided
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup turkey pepperoni or regular pepperoni
  • 1/2 cup diced bell peppers
  • 1/4 cup sliced black olives
  • 1/4 cup thinly sliced red onion
  • 1 tablespoon chopped fresh basil or parsley

Instructions

  1. Preheat the oven to 375°F and lightly grease a medium baking dish.
  2. In a large bowl, stir together the cottage cheese, eggs, 1/2 cup of the marinara sauce, Italian seasoning, garlic powder, salt, and black pepper until smooth and well combined.
  3. Spread the cottage cheese mixture evenly into the prepared baking dish.
  4. Spoon the remaining 1/2 cup marinara sauce over the top.
  5. Sprinkle the mozzarella and Parmesan evenly across the surface.
  6. Add the pepperoni, bell peppers, black olives, and red onion over the cheese.
  7. Bake for 30 to 35 minutes, until the center is set and the top is hot and bubbly.
  8. Broil for 1 to 2 minutes at the end if you want a more golden top.
  9. Let the bake rest for 5 to 10 minutes before serving.
  10. Finish with fresh basil or parsley and serve warm.
