- 2 large eggs
- 1 cup marinara sauce, divided
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup turkey pepperoni or regular pepperoni
- 1/2 cup diced bell peppers
- 1/4 cup sliced black olives
- 1/4 cup thinly sliced red onion
- 1 tablespoon chopped fresh basil or parsley
Instructions
- Preheat the oven to 375°F and lightly grease a medium baking dish.
- In a large bowl, stir together the cottage cheese, eggs, 1/2 cup of the marinara sauce, Italian seasoning, garlic powder, salt, and black pepper until smooth and well combined.
- Spread the cottage cheese mixture evenly into the prepared baking dish.
- Spoon the remaining 1/2 cup marinara sauce over the top.
- Sprinkle the mozzarella and Parmesan evenly across the surface.
- Add the pepperoni, bell peppers, black olives, and red onion over the cheese.
- Bake for 30 to 35 minutes, until the center is set and the top is hot and bubbly.
- Broil for 1 to 2 minutes at the end if you want a more golden top.
- Let the bake rest for 5 to 10 minutes before serving.
- Finish with fresh basil or parsley and serve warm.
