Instructions
- Preheat your oven to 275°F (135°C) and grease a 9 x 13-inch pan with butter, then dust with flour to prevent sticking.
- In a small bowl, combine 1 1/2 cups of mashed ripe bananas with 2 teaspoons of fresh lemon juice.
- In a medium bowl, whisk together 3 cups of all-purpose flour, 1 1/2 teaspoons of baking soda, and 1/4 teaspoon of salt.
- In a large mixing bowl, beat 3/4 cup of softened butter with 2 1/8 cups of sugar until light and fluffy, about 3-5 minutes.
- Incorporate 3 large eggs, one at a time, mixing well after each addition. Stir in 2 teaspoons of vanilla extract.
- Gradually beat in the flour mixture alternately with 1 1/2 cups of buttermilk until fully combined.
- Gently fold in the banana mixture.
- Transfer the batter into your prepared pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to the freezer for 45 minutes.
- For the frosting, beat together 1/2 cup of softened butter and 8 ounces of softened cream cheese until smooth and fluffy.
- Gradually incorporate 3 1/2 cups of icing sugar, mixing until smooth.
- Generously frost the cooled cake with the creamy mixture.
- Optionally, sprinkle chopped walnuts or decorative hearts on top.
Notes
- This banana cake is best enjoyed after chilling in the freezer for enhanced flavor and texture.
