  • 1 teaspoon vanilla extract (for frosting)
  • 3 1/2 cups icing sugar

Instructions

  1. Preheat your oven to 275°F (135°C) and grease a 9 x 13-inch pan with butter, then dust with flour to prevent sticking.
  2. In a small bowl, combine 1 1/2 cups of mashed ripe bananas with 2 teaspoons of fresh lemon juice.
  3. In a medium bowl, whisk together 3 cups of all-purpose flour, 1 1/2 teaspoons of baking soda, and 1/4 teaspoon of salt.
  4. In a large mixing bowl, beat 3/4 cup of softened butter with 2 1/8 cups of sugar until light and fluffy, about 3-5 minutes.
  5. Incorporate 3 large eggs, one at a time, mixing well after each addition. Stir in 2 teaspoons of vanilla extract.
  6. Gradually beat in the flour mixture alternately with 1 1/2 cups of buttermilk until fully combined.
  7. Gently fold in the banana mixture.
  8. Transfer the batter into your prepared pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to the freezer for 45 minutes.
  10. For the frosting, beat together 1/2 cup of softened butter and 8 ounces of softened cream cheese until smooth and fluffy.
  11. Gradually incorporate 3 1/2 cups of icing sugar, mixing until smooth.
  12. Generously frost the cooled cake with the creamy mixture.
