Description

Delicious chocolate-dipped peanut butter cookies perfect for any occasion.


Ingredients

Scale
  • 1 cup Unsalted butter (softened)
  • 3/4 cup Granulated sugar
  • 2 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Kosher salt
  • 2 cups All-purpose flour (sifted)
  • 1 cup Creamy peanut butter
  • 1 cup Powdered sugar
  • 1 cup Milk chocolate melting wafers

Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until it’s light and fluffy. The butter should be pale and smooth, about 3-4 minutes.
  2. Add the egg yolks, vanilla extract, and kosher salt into the butter mixture. Blend until fully combined.
  3. Gradually add the all-purpose flour until fully blended. Use your warm hands to shape it into a smooth ball.
  4. Cut the dough ball in half, then shape each half into a log about 1 ½ inches thick. Wrap each log in plastic wrap and refrigerate for approximately 45 minutes.
  5. Preheat your oven to 350°F. Once chilled, unwrap the dough logs and slice them into 24 cookies, about ¼ inch thick. Place them on a parchment-lined baking sheet.
  6. Bake the cookies for about 16 minutes, or until the edges are lightly golden brown. Let them cool completely on a wire rack.
  7. While cookies cool, beat the creamy peanut butter with powdered sugar in a bowl until smooth.
  8. Lay the cooled cookies back on parchment paper and drop a heaping teaspoon of the peanut butter mixture onto each one.
  9. Melt the chocolate wafers according to the package directions. Once melted and smooth, dip each cookie into the chocolate coating.
  10. With a fork, hold the cookie and use a spoon to drizzle extra melted chocolate over the top.
  11. Continue the chocolate dipping process with all remaining cookies until they are all perfectly coated.
