Delicious chocolate-dipped peanut butter cookies perfect for any occasion.

- 1 cup Unsalted butter (softened)
- 3/4 cup Granulated sugar
- 2 large Egg yolks
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Kosher salt
- 2 cups All-purpose flour (sifted)
- 1 cup Creamy peanut butter
- 1 cup Powdered sugar
- 1 cup Milk chocolate melting wafers
Instructions
- In a large mixing bowl, cream together the softened butter and granulated sugar until it’s light and fluffy. The butter should be pale and smooth, about 3-4 minutes.
- Add the egg yolks, vanilla extract, and kosher salt into the butter mixture. Blend until fully combined.
- Gradually add the all-purpose flour until fully blended. Use your warm hands to shape it into a smooth ball.
- Cut the dough ball in half, then shape each half into a log about 1 ½ inches thick. Wrap each log in plastic wrap and refrigerate for approximately 45 minutes.
- Preheat your oven to 350°F. Once chilled, unwrap the dough logs and slice them into 24 cookies, about ¼ inch thick. Place them on a parchment-lined baking sheet.
- Bake the cookies for about 16 minutes, or until the edges are lightly golden brown. Let them cool completely on a wire rack.
- While cookies cool, beat the creamy peanut butter with powdered sugar in a bowl until smooth.
- Lay the cooled cookies back on parchment paper and drop a heaping teaspoon of the peanut butter mixture onto each one.
- Melt the chocolate wafers according to the package directions. Once melted and smooth, dip each cookie into the chocolate coating.
- With a fork, hold the cookie and use a spoon to drizzle extra melted chocolate over the top.
- Continue the chocolate dipping process with all remaining cookies until they are all perfectly coated.
