Description
A delicious strawberry swiss roll made with fluffy sponge cake and whipped cream.

- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 cup fresh strawberries, sliced
- 1 cup heavy cream
- 1 tsp pure vanilla extract
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a mixing bowl, beat eggs and granulated sugar until pale and fluffy, about 5-7 minutes.
- Sift together flour and baking powder, then gently fold into the egg mixture.
- Pour batter into the prepared pan, spreading evenly. Bake for 10-12 minutes or until golden brown.
- While cooling, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once cooled, turn the sponge onto a powdered sugar-dusted kitchen towel. Spread whipped cream over the sponge, layer sliced strawberries on top, and roll tightly.
- Wrap in plastic wrap and refrigerate for at least an hour before slicing.
Notes
- This dessert is best served chilled.
- Make sure to sift the flour and baking powder mixture for a lighter sponge.
