Description

A delicious strawberry swiss roll made with fluffy sponge cake and whipped cream.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup fresh strawberries, sliced
  • 1 cup heavy cream
  • 1 tsp pure vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, beat eggs and granulated sugar until pale and fluffy, about 5-7 minutes.
  3. Sift together flour and baking powder, then gently fold into the egg mixture.
  4. Pour batter into the prepared pan, spreading evenly. Bake for 10-12 minutes or until golden brown.
  5. While cooling, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  6. Once cooled, turn the sponge onto a powdered sugar-dusted kitchen towel. Spread whipped cream over the sponge, layer sliced strawberries on top, and roll tightly.
  7. Wrap in plastic wrap and refrigerate for at least an hour before slicing.

Notes

  • This dessert is best served chilled.
