Description
This roasted cabbage dish is topped with Parmesan cheese and walnuts for a delicious and unique side.
Ingredients

- 1 medium head green cabbage
- 1 cup freshly grated Parmesan cheese
- ½ cup chopped walnuts
- 4 anchovy fillets (packed in oil)
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Slice cabbage into wedges about an inch thick.
- Drizzle olive oil over both sides of each wedge; season with salt and pepper.
- Place anchovy fillets on top of each wedge.
- Arrange wedges on a parchment-lined baking sheet and roast for 20-25 minutes until tender and golden brown.
- In the last five minutes, sprinkle Parmesan cheese and walnuts over the wedges; return to the oven until cheese is bubbly.
