Description

This roasted cabbage dish is topped with Parmesan cheese and walnuts for a delicious and unique side.


Ingredients

Scale
  • 1 medium head green cabbage
  • 1 cup freshly grated Parmesan cheese
  • ½ cup chopped walnuts
  • 4 anchovy fillets (packed in oil)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice cabbage into wedges about an inch thick.
  3. Drizzle olive oil over both sides of each wedge; season with salt and pepper.
  4. Place anchovy fillets on top of each wedge.
  5. Arrange wedges on a parchment-lined baking sheet and roast for 20-25 minutes until tender and golden brown.
  6. In the last five minutes, sprinkle Parmesan cheese and walnuts over the wedges; return to the oven until cheese is bubbly.
