- 2 pounds Chicken Breasts (skinless and boneless)
- 1 can Cream of Chicken Soup
- 1 can Cream of Mushroom Soup
- 1 can Diced Tomatoes with Green Chiles
- 1 medium Onion (diced)
- 3 cloves Minced Garlic (fresh preferred)
- 2 teaspoons Italian Seasoning
- 8 ounces Cream Cheese (cubed)
- 1 cup Cheddar Cheese (shredded)
- 8 ounces Spaghetti
Instructions
- Begin by finely dicing the onion and mincing the garlic. Cube the cream cheese to enhance its melting capabilities.
- In your slow cooker, add the chicken breasts, diced tomatoes with green chiles, cream of chicken and mushroom soups, onion, garlic, and Italian seasoning. Stir well to completely coat the chicken.
- Set your slow cooker to high for 3-4 hours or low for 6-8 hours.
- Once cooked, carefully remove the chicken from the slow cooker. Shred it using two forks, and return the shredded chicken back into the pot.
- Stir in the cubed cream cheese and melt it, then mix in half of the shredded cheddar cheese.
- Meanwhile, boil the spaghetti until al dente and then mix it into the creamy chicken sauce.
- Stir gently to combine and allow to meld together for a few more minutes before serving hot.
Notes
- This dish is great for meal prep and can be easily stored in the refrigerator for a few days.
