Description
Delicious meringue nests filled with whipped cream and topped with fresh mixed berries.
Ingredients

- 4 large egg whites
- 1 cup granulated sugar
- 1 tsp white vinegar
- 1 tsp cornstarch
- 1 cup heavy cream (cold)
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
Instructions
- Preheat oven to 225°F (110°C) and line two baking sheets with parchment paper.
- In a mixing bowl, whip egg whites on medium speed until soft peaks form (about 4-5 minutes).
- Gradually add sugar while beating on high speed until stiff peaks form and mixture is glossy.
- Gently fold in vinegar and cornstarch.
- Spoon meringue onto prepared baking sheets to create nests, making a well in the center.
- Bake for 1 hour 15 minutes until crisp outside and soft inside; leave in the oven to cool completely.
- Whip heavy cream to soft peaks; fill cooled nests with cream and top with fresh berries.
Notes
- Make sure the egg whites are free from any yolk for better whipping results.
- You can use a hand mixer or stand mixer for whipping the egg whites.
- Feel free to use any combination of fresh berries you prefer.
