Description

Delicious and wholesome carrot muffins that combine the flavors of Greek yogurt and maple syrup for a sweet treat.


Ingredients

  • 1 cup shredded carrots
  • 1 cup whole wheat flour
  • 1 1/2 cup Greek yogurt
  • 1 3/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1 1/2 teaspoon cinnamon
  • 1 1/4 teaspoon nutmeg
  • 1 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine shredded carrots, Greek yogurt, and maple syrup until well mixed.
  3. In a separate bowl, mix whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually fold dry ingredients into the carrot mixture until just combined.
  5. Scoop batter into the muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
