Delicious blueberry banana muffins, perfect for breakfast or a snack!
Ingredients

- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 cup plain Greek yogurt (full-fat or 2% is best)
- 2 medium ripe bananas
- 1/2 cup avocado oil
- 2 large eggs (at room temperature)
- 1 tsp vanilla extract
- 1 1/2 cups blueberries (fresh)
- 1 tbsp all-purpose flour
Instructions
- Preheat the oven to 350F. Line a muffin tray with 12 muffin liners and spray with non-stick cooking spray (to prevent sticking).
- In a large mixing bowl, mash the bananas. Add the Greek yogurt, avocado oil, eggs and vanilla, then whisk to combine.
- Add the dry ingredients to the bowl and stir together until just combined, being careful not to over-mix.
- Gently toss the blueberries with 1 tablespoon of flour before folding into the muffin batter.
- Divide batter evenly into the muffin liners, then bake in the oven at 350F for 22-25 minutes, depending on your oven, until a toothpick inserted into the muffins comes out clean.
- Serve with butter!
Notes
- Using full-fat Greek yogurt will yield a richer flavor and texture.
- Be careful not to over-mix the batter, as this can result in dense muffins.
