Instructions

  1. Whisk the dry ingredients in a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, salt, and espresso powder.
  2. Cream the butter and sugars in a large mixing bowl, cream the softened butter with both granulated and brown sugar until light and fluffy—this takes about 2–3 minutes.
  3. Add the molasses, egg, and vanilla in the molasses, crack in the egg, and add the vanilla extract. Beat until the mixture is fully combined, rich, and slightly glossy.
  4. Combine wet and dry by adding the dry ingredients to the wet mixture. Mix on low speed just until everything is incorporated.
  5. Chill the dough in the bowl for at least 1 hour (or up to 3 days). Chilling is crucial here—it allows the flavors to deepen and prevents the cookies from spreading too much during baking.
  6. Preheat and prepare your oven to 350°F (177°C) and line baking sheets with parchment paper. Scoop portions of chilled dough and roll each ball in coarse sugar for a sparkly finish.
  7. Bake the cookies about 2 inches apart on the baking sheets for 10–12 minutes until the edges are set but the centers still look soft.
