A delicious homemade marshmallow recipe.
Ingredients

- 1 cup granulated sugar
- ¾ cup light corn syrup
- ¼ cup water
- 2 tablespoons powdered ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- 2 ½ tablespoons unflavored gelatin powder
- ½ cup cold water (for gelatin)
- Powdered sugar (for dusting)
Instructions
- In a small bowl, mix the unflavored gelatin with ½ cup of cold water and let it bloom for 5-10 minutes.
- In a medium saucepan over medium heat, combine granulated sugar, corn syrup, water, powdered ginger, ground cinnamon, ground allspice, and a pinch of salt. Stir until dissolved and bring to a boil.
- Cook until the mixture reaches 240°F on a candy thermometer. Remove from heat and stir in bloomed gelatin until dissolved.
- Pour the syrup into a stand mixer bowl and whip on high speed for about 10-15 minutes until fluffy and stiff peaks form.
- Dust an 8×8-inch baking pan with powdered sugar. Spread marshmallow mixture evenly in the pan and dust with more powdered sugar.
- Let sit at room temperature for at least 4 hours until fully set before cutting into squares.
