Description

A delicious homemade marshmallow recipe.


Ingredients

  • 1 cup granulated sugar
  • ¾ cup light corn syrup
  • ¼ cup water
  • 2 tablespoons powdered ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 2 ½ tablespoons unflavored gelatin powder
  • ½ cup cold water (for gelatin)
  • Powdered sugar (for dusting)

Instructions

  1. In a small bowl, mix the unflavored gelatin with ½ cup of cold water and let it bloom for 5-10 minutes.
  2. In a medium saucepan over medium heat, combine granulated sugar, corn syrup, water, powdered ginger, ground cinnamon, ground allspice, and a pinch of salt. Stir until dissolved and bring to a boil.
  3. Cook until the mixture reaches 240°F on a candy thermometer. Remove from heat and stir in bloomed gelatin until dissolved.
  4. Pour the syrup into a stand mixer bowl and whip on high speed for about 10-15 minutes until fluffy and stiff peaks form.
  5. Dust an 8×8-inch baking pan with powdered sugar. Spread marshmallow mixture evenly in the pan and dust with more powdered sugar.
  6. Let sit at room temperature for at least 4 hours until fully set before cutting into squares.
