Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 ½ pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or roasting pan with olive oil.
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and paprika. Spread them evenly on one side of the pan, cut-side down.
  3. In a small bowl, combine melted butter, minced garlic, Italian seasoning, and grated parmesan. Stir until well blended.
  4. On the other side of the pan, brush the chicken breasts generously with the garlic parmesan butter mixture, ensuring each piece is well coated.
  5. Roast for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
  6. From the oven, sprinkle freshly chopped parsley over everything and let it rest for a few minutes before serving.

  • Make sure to avoid overcrowding the potatoes on the baking sheet for best results.
