- 4 boneless, skinless chicken breasts
- 1 ½ pounds baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or roasting pan with olive oil.
- In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and paprika. Spread them evenly on one side of the pan, cut-side down.
- In a small bowl, combine melted butter, minced garlic, Italian seasoning, and grated parmesan. Stir until well blended.
- On the other side of the pan, brush the chicken breasts generously with the garlic parmesan butter mixture, ensuring each piece is well coated.
- Roast for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
- From the oven, sprinkle freshly chopped parsley over everything and let it rest for a few minutes before serving.
Notes
- Make sure to avoid overcrowding the potatoes on the baking sheet for best results.
- Spoon some of the pan juices over the chicken halfway through cooking for extra flavor.
