Instructions

  1. Start by gently heating the olive oil in a large pot over medium heat. Add the peeled garlic cloves and let them cook slowly. You are not trying to brown them, just soften them. As they warm, the sharpness fades, and a sweet, mellow aroma begins to fill the air.
  2. Once the garlic is soft and fragrant, pour in the water or broth. Add the thyme, bay leaf, salt, and pepper. Bring everything to a gentle simmer. Let it cook for about 20–25 minutes, allowing the flavors to deepen and the garlic to become completely tender.
  3. At this point, I like to press some of the garlic cloves against the side of the pot with a spoon. This helps thicken the soup slightly and releases even more flavor, just like it would have been done in a traditional French kitchen.
  4. In a small bowl, whisk the eggs. Reduce the heat to low, then slowly drizzle the eggs into the soup while stirring gently. This creates delicate ribbons, giving the soup a silky texture.
  5. Place slices of toasted rustic bread into serving bowls and ladle the hot soup over them. The bread soaks up the broth, turning each bite into something hearty and satisfying.
