Description

Deliciously fluffy pancakes topped with a creamy sauce, perfect for a special breakfast.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 banana, sliced (optional)
  • Maple syrup or caramel sauce for drizzling

Instructions

  1. Prepare the Pancake Batter: In a large bowl, mix the flour, sugar, baking powder, and salt. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined (it’s okay if there are small lumps).
  2. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until the pancakes are golden brown on both sides and cooked through, approximately 2-3 minutes per side. Keep the pancakes warm in a preheated oven at 200°F (93°C) while you prepare the cream sauce.
  3. Make the Cream Sauce: In a mixing bowl, whisk together the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  4. Assemble the Pancakes: Stack the pancakes on a plate. Generously pour the cream sauce over the pancake stack. Drizzle with maple syrup or caramel sauce. Garnish with sliced bananas if desired.

Notes

  • Fluffiness Tip: Do not overmix the batter; this will ensure the pancakes remain fluffy.
  • Batter Consistency: If the batter is too thick, add a little more milk to reach the desired consistency.
  • Make-Ahead Tip: The cream sauce can be made ahead of time and stored in the refrigerator for up to a day.
  • Serve Warm: For the best taste, serve the pancakes and cream sauce warm.
