Description

This delicious Orange Ginger Chicken features tender, marinated chicken thighs baked to perfection with a flavorful sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 large fresh oranges (juice and zest)
  • 4 cloves garlic (minced)
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp fresh ginger (grated)
  • 1 tbsp cornstarch (for sauce)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a bowl, whisk together the juice and zest of the oranges, garlic, honey, soy sauce, and ginger to create the marinade.
  3. Place the chicken thighs in a resealable bag or bowl, pour half the marinade over them, and marinate for at least 30 minutes.
  4. Arrange the marinated chicken in the baking dish and drizzle with the remaining marinade.
  5. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  6. In a saucepan, bring any leftover marinade to a simmer. Mix in cornstarch dissolved in water to thicken into a glaze.
  7. Serve chicken drizzled with the sauce alongside rice or vegetables.

Notes

  • For a spicier version, add red pepper flakes to the marinade.
