Ingredients

- 1 ½ cups warm water (110°F)
- 2 tsp active dry yeast
- 4 cups all-purpose flour (unbleached)
- 1 tbsp brown sugar
- 1 tbsp coarse sea salt (plus more for topping)
- ⅓ cup baking soda
- 4 tbsp unsalted butter (melted)
Instructions
- In a mixing bowl, combine warm water and brown sugar. Sprinkle yeast on top; let it sit until bubbly.
- Mix in the flour and salt until a dough forms. Roll each piece into ropes approximately 12 inches long and twist into desired shapes.
- Boil water in a large pot and add the baking soda. Boil each pretzel stick for about 30 seconds before transferring to a parchment-lined baking sheet.
- Brush with melted butter and sprinkle with coarse salt. Bake at 425°F (220°C) for 12-15 minutes until golden.
Notes
- For a chewier pretzel, increase boiling time slightly.
- Experiment with toppings like cinnamon sugar or cheese.
