Description

Delicious chocolate-covered Medjool dates stuffed with creamy peanut butter and crunchy peanuts.


Ingredients

  • 12 Medjool dates
  • 6 tablespoons creamy peanut butter
  • 3 tablespoons roasted peanuts
  • 1 cup dark chocolate chips or chopped bar
  • 1 teaspoon coconut oil (optional)
  • 1 teaspoon flaky sea salt

Instructions

  1. Slice each Medjool date lengthwise on one side and remove the pit, keeping the date intact like a pocket.
  2. Fill each date with about 1/2 tablespoon of creamy peanut butter using a small spoon or spatula.
  3. Press 2–3 roasted peanuts into the peanut butter filling in each date.
  4. Place all stuffed dates on a parchment-lined baking sheet and freeze for 15–20 minutes to firm up.
  5. In a microwave-safe bowl or double boiler, melt the dark chocolate with coconut oil until smooth.
  6. Dip each chilled date into the melted chocolate using a fork, then let excess drip off.
  7. Place dipped dates back onto the parchment-lined tray.
  8. Immediately sprinkle each with a pinch of flaky sea salt before the chocolate hardens.
  9. Chill again in the fridge or freezer until fully set.
  10. Serve and enjoy!
