  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

  • 8 ounces orzo pasta
  • 2 celery stalks, finely diced
  • 2 carrots, finely diced
  • ½ yellow onion, finely diced
  • 5 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • ½ cup heavy whipping cream
  • 1 teaspoon chicken bouillon powder
  • ⅓ cup all-purpose flour

Instructions

  1. Prepare the orzo according to the package instructions by boiling it in salted water until al dente. Drain the orzo well and set it aside for later.
  2. Season the chicken breasts evenly with onion powder, garlic powder, paprika, salt, and black pepper. Cook the chicken in a skillet over medium heat until the internal temperature reaches 165°F and the meat is no longer pink in the center. Once cooled slightly, dice the chicken into bite-sized pieces.
  3. In the same skillet, melt the butter together with olive oil over medium heat. Add the finely diced onion, carrots, and celery, and cook while stirring occasionally until the vegetables begin to soften but still retain some bite, about 5-7 minutes.
  4. Sprinkle the all-purpose flour evenly over the cooked vegetables in the skillet. Whisk continuously for 2 to 3 minutes to cook out the raw flour taste and to form a roux, which will help thicken the sauce.
  5. Gradually whisk in the chicken broth and heavy whipping cream, ensuring the mixture becomes smooth and starts to thicken. Keep stirring until the sauce reaches a creamy consistency.
  6. Add the cooked diced chicken, chicken bouillon powder, and the cooked orzo back into the creamy sauce. Stir everything together and let it simmer gently for a few minutes until the mixture reaches the desired thickness and is heated through.
  7. Spoon the creamy chicken pot pie orzo into bowls and serve immediately while warm for a comforting meal.
