Ingredients

  • 4 fillets Salmon (Fresh or frozen)
  • 1 cup Cranberries (Fresh or frozen)
  • 1/2 cup Orange Juice
  • 2 tablespoons Honey or Maple Syrup (Use maple for a vegan option)
  • 1 clove Garlic (Optional, minced)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 sprigs Herbs (Thyme or rosemary, optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, mix together fresh cranberries, orange juice, honey, salt, and pepper. Cook over medium heat for about 5-7 minutes until cranberries burst and sauce thickens.
  3. Place the salmon fillets skin-side down on the baking sheet. Season with salt and pepper, then spoon the cranberry-orange glaze over each fillet.
  4. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
  5. Drizzle any remaining glaze over the salmon after baking.
  6. Garnish with fresh herbs for presentation, if desired.
