- 4 fillets Salmon (Fresh or frozen)
- 1 cup Cranberries (Fresh or frozen)
- 1/2 cup Orange Juice
- 2 tablespoons Honey or Maple Syrup (Use maple for a vegan option)
- 1 clove Garlic (Optional, minced)
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 sprigs Herbs (Thyme or rosemary, optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a saucepan, mix together fresh cranberries, orange juice, honey, salt, and pepper. Cook over medium heat for about 5-7 minutes until cranberries burst and sauce thickens.
- Place the salmon fillets skin-side down on the baking sheet. Season with salt and pepper, then spoon the cranberry-orange glaze over each fillet.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork.
- Drizzle any remaining glaze over the salmon after baking.
- Garnish with fresh herbs for presentation, if desired.

- For a vegan option, use maple syrup instead of honey.
