This delicious cranberry sugar cake is perfect for gatherings and special occasions.

- 3 Eggs
- 2 cups Sugar
- 3/4 cup Butter, Softened
- 1 tsp Vanilla
- 2 cups Flour
- 12 oz Fresh Cranberries
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
- In a medium size bowl, beat together eggs and sugar for about 5 minutes. The mixture should thicken slightly, almost doubling in size, and be light in color.
- Beat in softened butter and vanilla for an additional 2 minutes.
- Mix in flour until just combined.
- Fold in fresh cranberries.
- Spread batter evenly into the prepared pan and bake for 40 minutes, or until lightly browned and a toothpick inserted into the center comes out clean.

- Ensure the butter is softened for better mixing.
- Fresh cranberries may be substituted with frozen cranberries if necessary.
