Ingredients

  • 12 oz smoked kielbasa sausage, sliced
  • 4 cups Yukon Gold potatoes, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent (about 5 minutes). Add minced garlic and stir until fragrant.
  2. Add sliced kielbasa to the pot and brown it for about 5 minutes.
  3. Stir in diced potatoes and thyme. Pour in chicken broth to cover ingredients by an inch (approximately 4 cups).
  4. Bring to a gentle boil, then reduce heat to low. Simmer for about 20 minutes until potatoes are tender.
  5. Stir in heavy cream and warm through for another 5 minutes.
  6. Serve hot, garnishing with freshly cracked black pepper or chives if desired.

Notes

  • For a thicker soup, consider mashing some of the potatoes before adding the cream.
