- 1 cup fresh shiitake mushrooms, sliced
- 2 cups bok choy, chopped
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, minced
- 4 cups low-sodium vegetable broth
- 2 tbsp soy sauce
- 1 tbsp olive oil
Instructions
- Prepare ingredients: Clean and slice mushrooms, chop bok choy, and mince garlic and ginger.
- Sauté aromatics: Heat olive oil in a pot over medium heat. Add garlic and ginger; sauté until fragrant (about 2 minutes).
- Cook mushrooms: Add sliced mushrooms; cook for about 5 minutes until softened and browned.
- Add broth: Pour in vegetable broth and soy sauce; bring to a gentle boil. Reduce heat and simmer for 10 minutes.
- Toss in bok choy: Add chopped bok choy for the last 5 minutes until wilted but vibrant green.
- Serve: Ladle soup into bowls and garnish with sesame seeds or sliced green onions if desired.
