Instructions
- Combine chicken breasts, diced tomatoes, black beans, corn, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper in a crockpot.
- Stir everything together to ensure spices mix with the liquids and veggies.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
- Shred the chicken in the soup using two forks.
- Let the shredded chicken mingle with the broth for a few more minutes.
- Taste the soup and adjust seasonings if necessary.
- Serve hot, garnished with crispy tortilla strips, fresh cilantro, and lime wedges.
