Description

Delicious espresso chocolate chip cookies with a rich flavor and soft texture.


Ingredients

Scale
  • 2 cups all-purpose flour (spooned and leveled)
  • ⅓ cup espresso powder (I used Delallo)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ¾ cup salted sweet cream butter (12 tablespoons, softened)
  • ⅔ cup dark brown sugar
  • ⅓ cup granulated sugar
  • 1 extra large whole egg (room temperature)
  • 1 extra large egg yolk (room temperature)
  • 1½ teaspoons pure vanilla extract
  • 12 ounces semi-sweet chocolate chunks (I used Nestle Toll House)
  • 1 cup dark chocolate chips (I used Hershey’s)

Instructions

  1. Add the flour, espresso powder, baking soda, baking powder, and kosher salt to a medium-sized mixing bowl. Whisk to combine.
  2. Using a stand mixer or a medium-sized mixing bowl and handheld mixer on medium-high speed, beat the softened butter and sugars together for 1½ to 2 minutes until completely incorporated.
  3. Add the whole egg, egg yolk, and vanilla. Continue mixing until no yellow streaks remain.
  4. Add ½ of the flour and espresso mixture, and mix just until combined. Repeat for the remaining flour mixture.
  5. Add the semi-sweet chocolate chunks and the dark chocolate chips. Mix just until incorporated. Cover and chill in the refrigerator for 30 minutes.
  6. Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
  7. Use a 1½-tablespoon cookie scoop to scoop the cookie dough. Space the cookies 2 inches apart. Bake for 10 to 12 minutes.
  8. Allow the cookies to rest on the baking sheet for 2 to 3 minutes before transferring them to a cooling rack.

Notes

  • Chilling the dough helps to enhance the flavors and improve the texture.
  • For a more intense coffee flavor, you can increase the espresso powder.
