  • Total Time: 1 hour and 15 minutes
  • Yield: About 20 snowballs 1x

Description

A delicious dessert treat made with desiccated coconut and condensed milk, shaped into snowball-like bites.

Ingredients

Scale
  • 2 cups desiccated coconut
  • 1 cup condensed milk
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)
  • A pinch of salt

Instructions

  1. Mix Ingredients:
    • In a large mixing bowl, combine the desiccated coconut, powdered sugar, and salt.
    • Add the condensed milk slowly, stirring continuously until a sticky dough forms.
    • Add vanilla extract and mix until well incorporated.
    • If using nuts, fold them into the mixture.
  2. Shape the Snowballs:
    • With clean hands, scoop a small amount of the coconut mixture and roll it into a ball about 1 inch in diameter.
    • Repeat the process until all the mixture is used, placing each ball on a baking sheet lined with parchment paper.
  3. Chill the Snowballs:
    • Place the baking sheet in the refrigerator and let the snowballs chill for at least 1 hour. This will help them firm up and hold their shape.
  4. Coat with Coconut:
    • After chilling, roll each ball in additional desiccated coconut to give them a fluffy, snowy appearance.

Notes

  • For extra flavor, try adding a few drops of almond or coconut extract in addition to the vanilla.
  • Make sure your hands are slightly damp when rolling the mixture into balls to prevent sticking.
  • You can also dip the snowballs in melted chocolate for a different variation. Let the chocolate set in the refrigerator before serving.
  • Store them in an airtight container in the refrigerator for up to a week.
