Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F). Line a baking sheet (approx. 10×15 inches) with parchment paper.
- Prepare the Sponge: In a large bowl, beat the eggs and granulated sugar together until pale and fluffy. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
- Bake the Sponge: Pour the batter into the prepared baking sheet, spreading evenly. Bake for 10-12 minutes until the sponge springs back when touched lightly.
- Prepare the Chocolate Cream Filling: In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add in the powdered sugar, melted chocolate, and vanilla extract. Continue whipping until stiff peaks form.
- Assemble the Roll: Turn the baked sponge onto a clean kitchen towel dusted with cocoa powder. Peel off the parchment paper. While the sponge is still warm, spread an even layer of chocolate cream. Arrange the strawberry slices over the cream. Begin rolling the sponge gently but tightly using the towel to help guide it.
- Chill: Wrap the roll in plastic wrap and refrigerate for at least 2 hours to set.
- Serve: Slice the ends for a clean presentation. Garnish with extra strawberries and a dollop of cream if desired. Serve chilled.
