Description

This delicious, nutrient-dense pasta salad combines chickpea pasta with fresh greens and vegetables.


Ingredients

Scale
  • 1 package GoGo Quinoa Chickpea Pasta
  • 2 large handfuls arugula
  • 1 small radicchio (shaved)
  • 1 cup lettuce (finely shaved)
  • ½ cup tomatoes (diced)
  • ¼ cup pickled onions
  • ¼ cup roasted red pepper (chopped)
  • ¼ cup olives (chopped)
  • ¼ cup cheese cubes of choice
  • ¼ cup parmesan crisps (crushed)
  • 3 tbsp. olive oil
  • juice of 1 lemon
  • to taste freshly cracked pepper

Instructions

  1. Cook the GoGo Quinoa Chickpea Pasta according to the instructions on the package. Rinse and allow to cool.
  2. In a large bowl, combine ALL of the ingredients.
  3. Mix to combine and adjust seasoning to taste.
  4. Enjoy this delicious, nutrient-dense pasta salad!
