Description

A delicious and nutritious chia seed pudding that can be customized with your favorite sweeteners and flavors.


Ingredients

Scale
  • 1/3 cup chia seeds
  • 1/2 cup hot water
  • 3 tablespoons maple syrup, honey or coconut sugar
  • 2 teaspoons vanilla
  • pinch of sea salt
  • 1 1/2 cups Greek yogurt (or vegan yogurt)
  • 1 1/2 cups milk (almond, coconut, soy, etc.)

Instructions

  1. In a bowl or quart jar, mix chia seeds and hot water. Let this sit for 5 minutes. This starts hydrating the chia seed more quickly.
  2. Stir in vanilla, sweetener, and a pinch of salt. Add the Greek yogurt and milk. Whisk to combine thoroughly.
  3. At this point, you could divide into 4 smaller jars, it will keep in the refrigerator for 4-5 days.
  4. Chill for at least one hour before serving.

Notes

  • This pudding can be topped with fruits, nuts, or granola before serving for added texture and flavor.
