- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue to beat until creamy. Mix in the vanilla extract, lemon juice, and a pinch of salt. Add eggs one at a time, mixing on low speed after each addition just until blended. Gently fold in the sour cream.
- Assemble the Cheesecake: Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
- Bake the Cheesecake: Place the springform pan in a larger baking dish. Pour hot water into the larger dish to create a water bath. This will help prevent cracking. Bake in the preheated oven for 55-60 minutes or until the center is set and the edges are lightly browned. Allow the cheesecake to cool in the oven with the door slightly open for about an hour.
- Chill and Top: Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, to allow it to set completely. Before serving, spoon the cherry pie filling over the top of the cheesecake, spreading it evenly.
