Instructions

Mix in the vanilla extract, lemon juice, and a pinch of salt. Add eggs one at a time, mixing on low speed after each addition just until blended. Gently fold in the sour cream.
  3. Assemble the Cheesecake: Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
  4. Bake the Cheesecake: Place the springform pan in a larger baking dish. Pour hot water into the larger dish to create a water bath. This will help prevent cracking. Bake in the preheated oven for 55-60 minutes or until the center is set and the edges are lightly browned. Allow the cheesecake to cool in the oven with the door slightly open for about an hour.
  5. Chill and Top: Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, to allow it to set completely. Before serving, spoon the cherry pie filling over the top of the cheesecake, spreading it evenly.
