Cherry Filled Doughnuts

Description

Delicious homemade cherry-filled doughnuts, perfectly crisp on the outside and soft on the inside.


Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp instant yeast
  • ¼ cup granulated sugar
  • ¾ tsp salt
  • 2 large eggs
  • ¾ cup whole milk, lukewarm
  • ⅓ cup unsalted butter, softened
  • 2 cups fresh or frozen pitted cherries
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water (slurry)
  • ½ cup granulated sugar for coating

Instructions

  1. In a saucepan over medium heat, combine the cherries, sugar, and lemon juice. Let them simmer until the cherries begin to break down—about 8 to 10 minutes. Stir in the cornstarch slurry and continue cooking until thickened. Once done, set aside to cool completely.
  2. In a large mixing bowl or stand mixer, combine flour, yeast, sugar, and salt. Add the eggs and lukewarm milk. Begin mixing, and once a shaggy dough forms, add the softened butter, one tablespoon at a time.
  3. Knead the dough for 8–10 minutes until smooth and elastic. Cover and let it rise in a warm spot for 1–1½ hours, or until doubled in size.
  4. Once the dough has risen, turn it out onto a floured surface. Roll it to about ½-inch thickness and use a round cutter (about 3 inches) to cut out circles. Place them on a parchment-lined tray, cover, and let them rise again for 30–40 minutes.
  5. Heat neutral oil in a deep fryer or heavy pot to 340–350°F (170–175°C). Fry 2–3 doughnuts at a time, flipping halfway through, until golden brown on both sides. Drain on a paper towel-lined tray.
  6. Roll the warm doughnuts in granulated sugar. Use a piping bag fitted with a small nozzle to fill each doughnut with the cooled cherry filling. Insert the nozzle into the side of the doughnut and squeeze gently.

Notes

  • Make sure the oil temperature is accurate for the best frying results.
  • Allow the filling to cool completely before using it to fill the doughnuts.
