A comforting dish combining tender chicken thighs with buttery mashed potatoes and cheddar cheese.

- 1 lb boneless, skinless chicken thighs
- 1 cup butter chicken sauce (store-bought or homemade)
- 2 lbs Yukon Gold potatoes
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- ½ cup heavy cream (for mashed potatoes)
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In a skillet over medium heat, add oil and sauté chopped onions until translucent.
- Add diced chicken thighs, seasoning with salt and pepper; cook until fully cooked.
- Stir in butter chicken sauce and simmer for 5 minutes.
- Boil peeled and chopped potatoes in salted water until tender (about 20 minutes). Drain and mash with heavy cream until smooth.
- Spread the butter chicken mixture evenly in the baking dish, then top with mashed potatoes. Create peaks with a fork for crispiness.
- Sprinkle shredded cheddar on top and bake for about 25 minutes or until golden brown.
Notes
- For an extra kick, add some chili powder to the chicken mixture.
- Feel free to substitute other types of cheese if cheddar is not available.
