- 4 pieces Tortillas (low-carb or gluten-free options available)
- 2 cups Shredded Chicken (leftover roasted chicken works great)
- 1/2 cup BBQ Sauce (choose your favorite style)
- 1 cup Monterey Jack Cheese (can mix with cheddar or mozzarella)
- 1/4 cup Red Onion (or substitute with green onions)
- 1/4 cup Cilantro (or substitute with parsley)
- 1/2 cup Sour Cream (for dipping)
- 1/2 cup Salsa (fresh and zesty addition)
- 1 medium Avocado (sliced or as guacamole)
Instructions
- Warm your favorite BBQ sauce in a small saucepan over low heat. Mix the shredded chicken with the sauce until perfectly coated.
- Place one tortilla on a flat surface. Layer the BBQ chicken mixture in the center, sprinkle cheese on both sides, and top with a second tortilla.
- Heat a skillet over medium-high heat. Carefully place the quesadilla in the skillet and cook until golden brown, about 3-4 minutes on each side.
- Remove the quesadilla from the skillet and let it sit for a minute. Slice into wedges, and serve immediately with optional garnishes.
