Key Ingredients for Apple Pie Cookies

Apple Pie Cookies offer a delightful twist on the classic dessert, blending the comforting flavors of apple pie into a fun, handheld treat. To achieve that perfect balance of sweetness, warmth, and flaky goodness, you’ll need some essential ingredients that work together to create a mouthwatering experience.

  • Apples: For the filling, I prefer using a mix of tart and sweet apples, like Granny Smith and Honeycrisp. This combination provides a perfect balance, ensuring your cookies are flavorful and slightly tangy, just like a traditional apple pie.

  • Butter: A must for the flaky pastry, I use unsalted butter. It gives the dough its rich flavor and tender texture. Melting some of the butter for the filling adds an extra layer of creaminess.

  • Brown Sugar: This adds depth and a hint of caramel flavor to both the filling and the cookie dough. The molasses in brown sugar makes everything a little more comforting.

  • All-Purpose Flour: Essential for the dough, I always go with all-purpose flour to get that right balance of stretch and structure.

  • Spices: Cinnamon is a classic choice, but I also like to add a pinch of nutmeg for that holiday warmth. Together, they evoke the essence of cozy apple pies fresh from the oven.

  • Eggs: These are the magical binding agents! They help in achieving that perfect texture in the dough while also giving it a beautiful golden color when baked.

These ingredients come together to create delicious apple pie cookies that evoke nostalgia with every bite.

Why You’ll Love These Apple Pie Cookies

Imagine a cozy afternoon in fall, the aroma of warm spices wafting through your kitchen as you indulge in a delightful twist on a classic dessert. These apple pie cookies bring together all the comforting flavors of traditional apple pie but in a fun and portable form.

A Perfect Balance of Flavors

  • Sweet and Tart Apples: We use a mixture of sweet and tart apples to create a depth of flavor that you won’t find in an ordinary cookie. This balance makes each bite exciting!

  • Cherries: Tart cherries offer a unique contrast to the sweetness of the dough.
If you’re feeling adventurous, try a mixed filling of apples and berries for a burst of flavor!

Dough Variations

  • Homemade Dough: Making your apple pie cookies from scratch allows you to control the ingredients and customize flavors, like adding a hint of vanilla or almond extract.
  • Store-Bought Dough: On busy days, don’t hesitate to use store-bought pie crust or puff pastry. They save time without sacrificing taste.

Spice Blends that Complement the Recipe

Description

Delicious mini apple pie cookies topped with a caramel drizzle and sparkling sugar.

Ingredients

Scale
  • 21 ounces canned apple pie filling
  • 15 ounces twin pack pre-made rolled pie crust
  • ½ teaspoon apple pie spice
  • 4 tablespoons caramel sundae syrup
  • 1 large egg, (room temperature)
  • 1 tablespoon water, (room temperature)
  • 2 tablespoons white sparkling sugar

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or silicone baking sheet.
  2. Dice the apples in the canned pie filling.
  3. Add the diced apples and apple pie spice to a small mixing bowl. Stir to completely combine.
  4. Roll out the first pie crust into a 12-inch circle.
  5. Roll out the second sleeve of pie dough to 13 to 14 inches long.
  6. Use a pizza cutter to slice ¼ inch wide strips.
  7. Slice the strips into 3- to 3 ½-inch-long strips.
  8. Use a 3 inch cookie cutter to cut out 12 circles of pie dough. You will need to re-roll out the pie dough scraps to make all 12 circles.
  9. Place the pie dough circles on the prepared baking sheet about 1 inch apart.
  10. Add 1 teaspoon of the caramel sundae syrup to the center of each pie dough circle.
  11. Add 1 ½ tablespoons of the diced apple pie filling on top of the caramel. Do not spread the pie filling, it will spread out during the baking process.
  12. Next, use the sliced strips from the second rolled pie dough to create the lattice top by layering 4 sliced pie dough strips up and down and 3 strips across the top of the pie filling.
  13. Trim excess pie dough strips away and gently press the ends of the lattice into the edges of the pie dough circles.
  14. Using a small mixing bowl and a fork, beat together the egg and water. This is called an egg wash.
  15. Use a pastry brush to brush the egg wash over the lattice and edges of the cookies.
  16. Finally, sprinkle each cookie top with the white sparkling sugar.
  17. Bake the cookies for 25 to 28 minutes, or until the tops are golden brown. (Each oven bakes differently, so begin checking your cookies at the 20 minute mark).
  18. Allow the cookies to rest on the cookie sheet for 10 minutes before transferring to a cooling rack to cool for the remaining 20 minutes.
