Description

Delicious peanut butter chocolate cups that are easy to make and perfect for any occasion. Great with vegan and sugar-free options!


Ingredients

  • 1/2 cup creamy peanut butter (if you’re nut allergic you can substitute Sunbutter or your seed butter of choice.)
  • 4 tablespoons unsalted butter or vegan butter (softened)
  • 1/2 cup confectioners’ sugar (or vegan & sugar-free options use sugar-free confectioners’ sugar like Lakanto)
  • 2 cups semi-sweet chocolate chips or dairy-free semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 24 mini candy liners

Instructions

  1. Line a mini muffin tin with 24 mini candy liners.
  2. In a small bowl, using a mixer, beat together the peanut butter, butter, and confectioners’ sugar to achieve a creamy peanut butter consistency for the filling. Ensure it is smooth and lump-free. Set aside.
  3. In a microwave-safe bowl, combine the chocolate chips or chunks with 1/2 cup peanut butter. Microwave for one minute, stir, and continue to cook in 30-second increments until melted and smooth, usually taking about 1 & 1/2 minutes.
  4. Pour about a teaspoon of the melted chocolate into each candy liner. Place some of the peanut butter mixture in the center of the chocolate, gently pushing it down, ensuring it doesn’t touch the sides. Top with another thick layer of melted chocolate to cover the peanut butter, filling the liner to the top. Add peanuts on top and drizzle more chocolate if desired.
  5. Refrigerate the PB Cups to set completely before serving (about 2 hours, depending on your fridge temperature). Store in an airtight container in the fridge or freeze. Makes 24 with Vegan & Sugar-Free Options.
