- 1 (15-ounce) can black beans, rinsed and drained
- 1 large ripe avocado
- ½ cup frozen or canned corn
- ¼ cup finely chopped red onion
- ¼ cup fresh cilantro, chopped
- 1 tablespoon freshly squeezed lime juice
- ½ teaspoon cumin powder
- ¼ teaspoon chili powder
- Salt and black pepper to taste
- 4 large (10-inch) flour tortillas
Instructions
- In a medium-sized mixing bowl, mash the avocado with a fork to your desired consistency. Add lime juice and stir.
- Add black beans, corn, red onion, and cilantro to the bowl, mixing gently.
- Sprinkle cumin, chili powder, salt, and black pepper over the mixture, folding gently to combine.
- Warm the tortillas in a skillet or microwave until pliable.
- Spoon filling into the center of each tortilla, roll to wrap snugly.
- Serve immediately, optionally sliced in half for presentation.
