Description

Delicious and healthy black bean and avocado tortillas filled with fresh ingredients.


Ingredients

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 large ripe avocado
  • ½ cup frozen or canned corn
  • ¼ cup finely chopped red onion
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon freshly squeezed lime juice
  • ½ teaspoon cumin powder
  • ¼ teaspoon chili powder
  • Salt and black pepper to taste
  • 4 large (10-inch) flour tortillas

Instructions

  1. In a medium-sized mixing bowl, mash the avocado with a fork to your desired consistency. Add lime juice and stir.
  2. Add black beans, corn, red onion, and cilantro to the bowl, mixing gently.
  3. Sprinkle cumin, chili powder, salt, and black pepper over the mixture, folding gently to combine.
  4. Warm the tortillas in a skillet or microwave until pliable.
  5. Spoon filling into the center of each tortilla, roll to wrap snugly.
  6. Serve immediately, optionally sliced in half for presentation.
