Description

A deliciously moist and fragrant cake made with fresh oranges and olive oil.


Ingredients

  • 2 medium seedless oranges
  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup olive oil
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Wash two medium seedless oranges thoroughly. Cut them into chunks, removing any seeds (do not peel).
  2. Add the orange pieces to a blender or food processor.
  3. Add 3 eggs, 1 cup sugar, and 1/2 cup olive oil. Blend until smooth and fully combined.
  4. In a large bowl, whisk together the flour, baking powder, and salt.
  5. Pour the blended orange mixture into the dry ingredients and stir gently until just combined.
  6. Pour the batter into a greased and floured 8-inch round cake pan.
  7. Bake at 350°F (175°C) for 40–45 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Dust with powdered sugar or glaze before serving if desired.

Notes

  • This cake is best served fresh but can be stored in an airtight container for a few days.
