Ingredients

- 2 medium seedless oranges
- 3 large eggs
- 1 cup sugar
- 1/2 cup olive oil
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
Instructions
- Wash two medium seedless oranges thoroughly. Cut them into chunks, removing any seeds (do not peel).
- Add the orange pieces to a blender or food processor.
- Add 3 eggs, 1 cup sugar, and 1/2 cup olive oil. Blend until smooth and fully combined.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Pour the blended orange mixture into the dry ingredients and stir gently until just combined.
- Pour the batter into a greased and floured 8-inch round cake pan.
- Bake at 350°F (175°C) for 40–45 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Dust with powdered sugar or glaze before serving if desired.
Notes
- This cake is best served fresh but can be stored in an airtight container for a few days.
- Feel free to add nuts or chocolate chips for additional texture and flavor.
