Description

A delicious and healthy side dish of roasted green beans with garlic and lemon.


Ingredients

Scale
  • 12 ounces whole green beans (ends trimmed)
  • 45 cloves garlic (roughly chopped; see note #1)
  • 1 teaspoon extra virgin olive oil
  • 1/4 teaspoon salt
  • freshly ground black pepper (to taste)
  • 1 small lemon (juiced and zested)

Instructions

  1. Preheat the oven to 400F.
  2. Add the green beans and roughly chopped garlic to a baking sheet. Drizzle with olive oil. Use clean hands to toss the green beans in the oil until they are thoroughly coated. Sprinkle with salt.
  3. Place in the oven on the middle shelf. Roast for 12-15 minutes, or until the green beans are golden and starting to shrivel. The garlic should also be golden.
  4. Remove from the oven. Just before serving, squeeze with half of a lemon and sprinkle with lemon zest. Enjoy!

  • Note #1: For a milder garlic flavor, you can reduce the amount of garlic used.
