Instructions
- Prepare the Dough: In a small bowl, dissolve the yeast in warm water. Let it stand until bubbly, about 5 minutes. In a large bowl, mix the yeast mixture, warm milk, sugar, salt, melted butter, and eggs. Gradually add flour and mix until a dough forms. Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes. Place the dough in a greased bowl, cover with a clean cloth, and let rise in a warm place until doubled in size, about 1 hour.
- Form the Doughnuts: Roll out the dough on a floured surface to about 1/2-inch thickness. Cut out doughnuts with a 3-inch doughnut cutter or a large round cutter for filled doughnuts. Place on parchment-lined baking sheets, cover, and let them rise until doubled, about 30 minutes.
- Fry the Doughnuts: Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully drop doughnuts into the hot oil, a few at a time. Fry each side until golden brown, about 1-2 minutes per side. Remove with a slotted spoon and drain on paper towels.
- Prepare the Cream Filling: Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Using a pastry bag fitted with a small tip, fill each doughnut with cream.
- Prepare the Chocolate Glaze: Melt chocolate chips and heavy cream in a microwave or double boiler until smooth. Dip the top of each doughnut in the chocolate glaze and place on a wire rack. Sprinkle with chocolate sprinkles.
