- 2 sheets puff pastry, thawed
- 1/4 cup granulated sugar

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Cream Cheese Filling: In a bowl, mix the cream cheese with 1/4 cup of granulated sugar and vanilla extract until smooth.
- Prepare Pastry: Lightly dust your work surface with flour. Roll out each thawed puff pastry sheet to smooth any folds, approximately 10×10 inches.
- Fill Pastry: Cut each pastry sheet into 4 equal squares. Place a tablespoon of the cream cheese mixture in the center of each square.
- Fold and Seal: Fold the pastry over the filling to form a triangle, or bring all four corners to the center to form a pocket. Use a fork to press edges and seal the pastries tightly.
- Egg Wash: In a small bowl, beat the egg. Brush the top of each pastry with the egg wash for a golden finish.
- Bake: Place the pastries on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the pastries are golden and puffed.
- Cool and Serve: Remove from oven and let cool slightly. Dust with powdered sugar or sprinkle cinnamon if desired before serving.
