Description

Delicious cookies packed with chocolate, coconut, and almonds.


Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 0 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0 teaspoons salt
  • 1 cup shredded coconut (unsweetened)
  • 1 cup chopped dark chocolate or chocolate chips
  • 1 cup roasted almonds (chopped)

Instructions

  1. In a large bowl, cream the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add eggs one at a time, then mix in vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in shredded coconut, chopped dark chocolate, and roasted almonds evenly.
  6. Scoop dough onto lined baking sheets and bake at 350°F (175°C) for 10–12 minutes.
  7. Cool cookies on baking sheet for 5 minutes before transferring to a wire rack.
