Instructions
- Prepare the Cookie Dough: Preheat the oven to 350°F (175°C) and lightly grease a muffin tin. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In another bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture, mixing until combined.
- Prepare the Cheesecake Filling: In a medium bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, and continue to beat until creamy and well combined.
- Assemble the Cookie Cups: Roll cookie dough into 1.5-inch balls and place them into the prepared muffin tin. Press them down to form a cup shape. Fill each cookie cup with 1 to 2 teaspoons of cheesecake mixture. Top with a few blueberries and drizzle a little lemon juice over them. Add a small amount of blueberry jam if desired.
- Bake: Bake in the preheated oven for 15-18 minutes, or until the edges are golden brown. Allow the cookie cups to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
